Chef Instructor Tom Makes Chocolate Chip Cookies
Ap flour 350g
Baking powder 5g
Iodized salt 5g
Butter 250g
Brown sugar 250g
Whole eggs 100g
Vanilla paste 5g
Chocolate chips 300g
Get all the ingredients out at least an hour before mixing to soften the butter and to get the eggs to room temperature. I like to mise en place all of the ingredients to make mixing go faster.
Sift the flour, baking soda and salt together and set aside.
Cream the butter and sugar together for about 8 minutes. It might take that long. It should be completely emulsified. Add the vanilla now too. Add the eggs one at a time until they disappear.
Add the flour mixture in two additions so you don't get a face full of flour when you mix. Add the chocolate chips and you're done mixing. Place the dough in a container and let it rest in the refrigerator for 2-3 hours.
Preheat the oven to 375°F. Scoop the cookies to 30g size. You can do it by hand if you don't have a scoop. Place the cookies on a sheet pan with either a silpat or parchment. Place the sheet in the oven for 9-10 minutes. There should be some brown color on the cookies when they are done. Cool the pan on a wire rack for 5-10 minutes. Then enjoy some of the best cookies you have ever made. Happy Baking!
