Chef Instructor Tom Makes Tea Cake
Tea Cake Recipe
113g butter
150g granulated sugar
100g eggs
5g vanilla extract
220g sour cream
190g all-purpose flour
7g baking powder
3g baking soda
1g ground nutmeg
3g table salt
Powdered sugar for topping
Prepare your 8 X 8 inch pan with some pan spray and parchment. Sift your dry ingredients together. This would be the ap flour, baking soda, baking powder and the table salt. You can preheat the oven to 375°F now as well.
Cream out the butter and sugar. This might take upwards of 10 minutes depending on how soft your butter is. Once it's pretty fluffy and you have scraped down the sides of the mixer a couple of times, you can add the eggs one at a time. Don't add the next egg until the first one disappears. Now you have all your creamed ingredients in a fluffy state, you can add 1/2 the flour mixture. Add 1/2 the sour cream. Finish this up with the remaining flour and sour cream. The batter is mixed. Add the batter to the prepared pan and smooth the top out. Place the pan in the preheated oven. Bake for 30-40 minutes. Test for doneness. When it's baked, let it cool for at least 30 minutes on a wire rack before removing from the pan. Dust the cake liberally with powdered sugar and enjoy a very delicious simple cake.
